Sharpening + Restoration

Knife Sharpening

A sharp knife is a safe knife. Most kitchen knife injuries happen because of a dull blade. A sharp knife enables the cook to have more controlled movements because the knife does the work. A sharp knife means the cook doesn’t have to apply so much pressure so the object being cut is less likely to shift, catch, or crush.

Hone & True sharpens all kinds of blades. Paul is meticulous in his craft and considers the edge angle, type of steel, use, and other factors with each knife. Every knife is guaranteed to return to you razor sharp.

Cutting paper or shaving hair are often used to demonstrate the sharpness of a blade. These certainly evidence a sharp edge, but those methods lack the precision and standardization required to truly answer the question, “how sharp is it?” When a specific edge is required, Paul uses digital tools to measure both edge angle and sharpness.

Be careful with kitchen knives is a helpful article from University of Rochester Medical Center for knife safety and choosing the best knife for the culinary task.

Restoration

Bringing an heirloom back from the brink of loss is one of Paul’s favorite jobs. He has developed a process to restore and repair knives and tools that look to be beyond hope. Of course, not every piece of steel can be fully salvaged, but there is a good chance your old or abused knife or tool can find new life again.

Minor chip and tip repair is part of Hone & True’s standard service and is included with the price of sharpening. If an object requires additional restoration, Paul will review the scope of work prior to service.
